Where does food waste really begin? With the wild plants that go largely unused because we have no recipes for them. Peter Becker cooks up “weeds” that others combat with herbicides.


Bring 20 g of water to a boil, add the impatiens blossoms and sprinkle the citric acid over top. Strain and cool. Then add 500 g of preserving sugar and one level teaspoon of agar-agar and bring to a boil. Simmer for four minutes on a low heat. Skim off and pour into sterile jars. Keeps for at least one year.
