Whether you dumpster dive as a researcher, activist or private citizen, the how-to is always the same. Supermarket dumpsters often contain large quantities of fresh apples. Most of the time a whole bag is thrown out, even if only one apple is damaged.

Step One:
It is important to proceed with caution. You must ensure that no other apples are damaged in the dumpster diving process. Dumpster divers must take care to only take those apples that are still in the package and not touch the remainder of the garbage.
Be sure to wash the apples thoroughly. That order goes double for the dumpster diver!

Step Two:
Peel and core the apples and cut into slices. Sprinkle with lemon juice. Bring a mixture of a half a liter of water and 500 grams of sugar, cloves and vanilla beans to a boil. Add the apple slices and stew until soft. Fill the compote into jars to preserve it.
